Ingredients

  • 1 kg mutton (bone-in)
  • 3 cups basmati rice (soaked for 30 minutes)
  • 2 onions (sliced)
  • 3 tomatoes (chopped)
  • 2 potatoes (cut into halves)
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 cup yogurt
  • Salt to taste
  • 1/2 cup cooking oil
  • 4-5 cups water
  • Fresh coriander and mint leaves for garnish
  • Fried onions (for topping)

Instructions

  • Heat oil in a large pot and add cumin seeds. Let them splutter.
  • Add sliced onions and sauté until golden brown.
  • Add ginger-garlic paste and fry for a minute.
  • Add mutton and cook until browned.
  • Add red chili powder, turmeric, garam masala, and salt. Mix well.
  • Add chopped tomatoes and yogurt. Cook until the oil separates.
  • Add potatoes and water. Cover and cook until mutton is tender.
  • In another pot, boil rice with salt and whole spices (bay leaves, cloves, and cardamom) until 70% cooked. Drain excess water.
  • Layer the cooked mutton with the partially cooked rice. Top with fried onions, mint, and coriander leaves.
  • Cover and steam (dum) on low heat for 15-20 minutes.
  • Serve hot with raita and salad.
