Ingredients

  • For Gulab Jamun Dough:

  • 1/4 cup all-purpose flour (maida)
  • 1/4 tsp baking soda
  • 2 tbsp ghee (clarified butter)
  • 1/4 cup warm milk (adjust as needed)
  • 1/2 tsp cardamom powder
  • Oil or ghee (for deep frying)
  • For Sugar Syrup:
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 tsp cardamom powder
  • A few saffron strands (optional)
  • 1/2 tsp rose water (optional)
  • 1/2 tsp lemon juice (prevents crystallization)

Instructions

Step 1: Prepare the Sugar Syrup

  •  In a saucepan, combine sugar and water. Heat on medium flame and stir until the sugar dissolves.
  •  Add cardamom powder, saffron strands, and lemon juice. Let it simmer for 5-7 minutes until slightly sticky (not too thick).
  •  Turn off the heat and add rose water. Keep the syrup warm.

Step 2: Make the Gulab Jamun Dough

  • In a mixing bowl, combine milk powder, all-purpose flour, and baking soda. Mix well.
  •  Add ghee and rub it into the dry ingredients until the mixture becomes crumbly.
  • Gradually add warm milk, little by little, and knead gently into a soft, smooth dough. Do not overknead.
  • Cover and let the dough rest for 10 minutes.

Step 3: Shape the Jamuns

  • Grease your hands with a little ghee and divide the dough into small equal portions.
