Ingredients

  • For the Sheer Khurma:
  • 1 liter (4 cups) full-fat milk
  • ½ cup vermicelli (seviyan), broken into small pieces
  • 3 tablespoons ghee (clarified butter)
  • 8-10 dates, chopped
  • ¼ cup sugar (adjust to taste)
  • 2-3 green cardamom pods, crushed
  • 2 tablespoons chopped almonds
  • 2 tablespoons chopped pistachios
  • 1 tablespoon chopped cashews
  • 1 tablespoon raisins
  • 1 teaspoon chironji (charoli seeds) (optional)
  • ½ teaspoon saffron strands (optional)
  • ½ teaspoon rose water (optional)

Instructions

Step 1: Roast the Vermicelli and Nuts

  1. Heat ghee in a heavy-bottomed pan over medium heat.
  2. Add chopped almonds, pistachios, cashews, raisins, and chironji. Sauté for 2 minutes until they turn golden and fragrant.
  3. Remove the nuts from the pan and set aside.
  4. In the same pan, add vermicelli and roast until golden brown. Stir continuously to avoid burning.

Step 2: Cook the Sheer Khurma

  1. Pour milk into the pan and bring it to a boil. Stir occasionally to prevent burning.
  2. Add the crushed cardamom, chopped dates, and saffron. Let it simmer for 10-15 minutes.
  3. Add sugar and stir until it dissolves completely.

Step 3: Add Nuts and Final Touches

  1. Add the roasted nuts and mix well. Let the sheer khurma simmer for another 5 minutes, allowing the flavors to blend.
  2. Turn off the heat and add rose water for a fragrant touch.

Step 4: Serve and Enjoy

  1. Sheer Khurma can be served warm or chilled. Garnish with extra nuts before serving.
