Ingredients

  • kg fresh carrots (grated)
  • 1 liter full-fat milk
  • ½ cup sugar (adjust to taste)
  • 4 tbsp ghee (clarified butter)
  • ½ cup khoya (optional, for richness)
  • ½ tsp cardamom powder
  • 2 tbsp chopped almonds, pistachios, & cashews
  • 1 tbsp raisins (optional)
  • A few saffron strands (optional, for flavor & color)

Instructions

Step 1: Prepare the Carrots

  • Wash, peel, and grate raw carrots. A fine grater will provide a soft and smooth texture.

Step 2: Steam the Carrots in Milk

  • Heat a kadai or heavy-bottomed pan and add the grated carrot.
  • Add full-fat milk and allow it to boil gently over low heat, stirring every now and again.
  • Simmer on low-medium heat for 30-40 minutes, stirring every now and then until the milk thickens and reduces.

Step 3: Add Sugar & Flavorings

  • After the milk is soaked, add sugar and stir well.
  • Add cardamom powder and keep cooking for another 10 minutes until the mixture becomes thick.

Step 4: Add Ghee & Khoya

  • Add ghee and mix well, cooking for 5-7 minutes until the halwa is glossy.
  • If usedbreak and mix with khoya for a fuller, creamier flavor.
