Ingredients

  • 4 cups fresh watermelon, cubed and seedless
  • ½ cup fresh lemon juice (about 3-4 lemons)
  • 2 tablespoons honey or sugar (adjust to taste)
  • 2 cups cold water
  • 1 cup ice cubes
  • Fresh mint leaves for garnish (optional)
  • Lemon slices for garnish (optional)

Instructions

Step 1: Prepare the Potatoes

  1. Wash and peel the potatoes (optional, if you like skin-on fries).
  2. Cut them into thin, even strips for uniform cooking.

Step 2: Soak the Potatoes

  1. Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes (or up to 2 hours). This removes excess starch and makes the fries extra crispy.
  2. Drain and pat the potatoes completely dry using a clean kitchen towel or paper towels.

Step 3: Fry the Potatoes (First Frying)

  1. Heat the vegetable oil in a deep pan or fryer to 325°F (163°C).
  2. Add the dried potato strips in small batches and fry for about 3-4 minutes, until they turn soft but not browned.
  3. Remove the fries and place them on a paper towel-lined plate to drain excess oil.

Step 4: Fry the Potatoes Again (Second Frying for Crispiness)

  1. Increase the oil temperature to 375°F (190°C).
  2. Fry the partially cooked fries in batches again for about 2-3 minutes, until they turn golden brown and crispy.
  3. Remove and drain on fresh paper towels.

Step 5: Season and Serve

  1. While the fries are still hot, sprinkle them with salt and any additional seasonings like black pepper, garlic powder, or paprika.
  2. Serve immediately with ketchup, mayonnaise, or your favorite dipping sauce!
