Ingredients

  • 1 small onion (grated and excess water squeezed out)
  • 2 tablespoons chickpea flour (for binding)
  • 2 tablespoons yogurt (for tenderness)
  • 2 tablespoons finely chopped coriander
  • 1 tablespoon finely chopped mint
  • 2 green chilies (finely chopped)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon paprika
  • ½ teaspoon garam masala
  • ½ teaspoon black pepper
  • Salt to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon melted butter or ghee (for extra juiciness)
  • For Cooking:
  • 2 tablespoons oil (for frying or grilling)
  • For Garnishing & Serving:
  • Sliced onions
  • Lemon wedges
  • Mint yogurt chutney
  • Pita bread or naan (optional)

Instructions

Step 1: Prepare the Kebab Mixture

  1. In a large bowl, mix the minced meat with all the ingredients, ensuring everything is well combined.
  2. Cover and let it marinate in the refrigerator for at least 30 minutes (or overnight for deeper flavor).

Step 2: Shape the Kebabs

  1. Take a small portion of the mixture and shape it into a crescent moon.
  2. Repeat with the remaining mixture and place the kebabs on a tray.

Step 3: Cook the Kebabs

  • Pan-Fry: Heat oil in a pan and cook the kebabs for 3-4 minutes per side until golden brown and cooked through.
  • Grill: Preheat the grill to medium-high and cook for 5-7 minutes per side, brushing with butter for extra flavor.
  • Bake: Preheat the oven to 200°C (400°F) and bake for 15-20 minutes, flipping halfway.
