Ingredients

  • 12 oz (340g) fettuccine pasta
  • 1 cup (240ml) heavy cream
  • ½ cup (1 stick) unsalted butter
  • 1½ cups (150g) freshly grated Parmesan cheese
  • 2 cloves garlic, minced (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp nutmeg (optional, for depth of flavor)
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Fettuccine

  1. Bring a large pot of salted water to a boil.
  2. Cook fettuccine pasta until al dente (about 1 minute less than package instructions).
  3. Reserve ½ cup pasta water, then drain the pasta.

Step 2: Prepare the Alfredo Sauce

  1. In a large skillet over medium heat, melt butter.
  2. Add minced garlic (if using) and sauté for 30 seconds until fragrant.
  3. Pour in heavy cream and stir continuously for 2 minutes.
  4. Reduce heat to low and gradually add Parmesan cheese, stirring constantly until melted.
