What Is Kheer?

Ingredients

  • 1/4 cup basmati rice (rinsed & soaked for 30 minutes)
  • 4 cups full-fat milk
  • 1/2 cup sugar (adjust to taste)
  • 1/2 tsp cardamom powder
  • 8-10 saffron strands (optional)
  • 2 tbsp chopped almonds & pistachios
  • 1 tbsp raisins (optional)
  • 1/2 tsp rose water or kewra water (optional)
  • 1 tbsp ghee (clarified butter)

Instructions

Step 1: Cook Rice

  • Ghee should be heated in a pan and soaked rice should be fried lightly for 2 minutes on low heat.
  • In a pan, milk should be boiled and the fried rice added. Stir well.
  • It should be allowed to simmer on low heat for 30-40 minutes, stirring regularly until the rice softens and milk gets thick.

Step 2: Add Sweetness & Flavor

  • Add sugar and mix until it's completely dissolved.
  • Add cardamom powder, saffron threads, and chopped nuts.
  • Allow it to boil for a further 5-10 minutes until it is the required creamy thickness.

Step 3: Garnish & Serve

  • Switch off the heat and pour in rose/kewra water for a fragrant flavor.
  • Garnish with additional nuts and raisins.
  • Serve warm or chilled for optimal flavor!

Tips for Perfect Kheer

  • Use full-fat milk to provide a rich and creamy texture.
