Sheer Khurma: Traditional Eid Special Vermicelli Dessert
Sheer Khurma is a traditional Mughlai dessert made with vermicelli (seviyan), milk, dates, and aromatic spices. This delicious, creamy dish is specially prepared for Eid-ul-Fitr and enjoyed during Ramadan. Cooked to perfection with ghee, saffron, and nuts, it offers a delightful combination of sweetness and rich flavors. Ingredients
- For the Sheer Khurma:
- 1 liter (4 cups) full-fat milk
- ½ cup vermicelli (seviyan), broken into small pieces
- 3 tablespoons ghee (clarified butter)
- 8-10 dates, chopped
- ¼ cup sugar (adjust to taste)
- 2-3 green cardamom pods, crushed
- 2 tablespoons chopped almonds
- 2 tablespoons chopped pistachios
- 1 tablespoon chopped cashews
- 1 tablespoon raisins
- 1 teaspoon chironji (charoli seeds) (optional)
- ½ teaspoon saffron strands (optional)
- ½ teaspoon rose water (optional)
Instructions
Step 1: Roast the Vermicelli and Nuts
- Heat ghee in a heavy-bottomed pan over medium heat.
- Add chopped almonds, pistachios, cashews, raisins, and chironji. Sauté for 2 minutes until they turn golden and fragrant.
- Remove the nuts from the pan and set aside.
- In the same pan, add vermicelli and roast until golden brown. Stir continuously to avoid burning.
Step 2: Cook the Sheer Khurma
- Pour milk into the pan and bring it to a boil. Stir occasionally to prevent burning.
- Add the crushed cardamom, chopped dates, and saffron. Let it simmer for 10-15 minutes.
- Add sugar and stir until it dissolves completely.
Step 3: Add Nuts and Final Touches
- Add the roasted nuts and mix well. Let the sheer khurma simmer for another 5 minutes, allowing the flavors to blend.
- Turn off the heat and add rose water for a fragrant touch.
Step 4: Serve and Enjoy
- Sheer Khurma can be served warm or chilled. Garnish with extra nuts before serving.
