Ingredients

  • 12 oz (340g) spaghetti
  • 4 oz (115g) pancetta or guanciale, diced
  • 2 large eggs + 2 egg yolks
  • 1 cup (100g) Pecorino Romano cheese, grated
  • 1 teaspoon freshly ground black pepper
  • Salt, to taste

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the spaghetti until al dente (about 1 minute less than package instructions).
  3. Reserve ½ cup (120ml) pasta water, then drain the pasta.

Step 2: Prepare the Sauce

  1. In a bowl, whisk together eggs, egg yolks, grated Pecorino Romano, and black pepper. Set aside.

Step 3: Cook the Pancetta

  1. In a large pan over medium heat, cook the pancetta until crispy (about 3-4 minutes).
  2. Turn off the heat to prevent the eggs from scrambling.

Step 4: Combine Everything

  1. Add the hot drained pasta to the pan and toss to coat in the pancetta fat.
  2. Slowly add the egg mixture, stirring quickly to create a creamy sauce.
  3. If the sauce is too thick, add a little reserved pasta water to loosen it.

Step 5: Serve & Enjoy

  1. Plate the pasta immediately and top with more Pecorino Romano and black pepper.
