Ingredients

  • 1 kg mutton (preferably shank pieces)
  • 3 onions (sliced)
  • 2 tbsp ginger-garlic paste
  • 1 tsp fennel seeds
  • 1 tsp black peppercorns
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/4 cup wheat flour (for thickening)
  • Salt to taste
  • 1/2 cup cooking oil
  • 6-7 cups water
  • Fresh coriander leaves and lemon wedges for garnish

Instructions

  1. Heat oil in a large pot and add sliced onions. Sauté until golden brown.
  2. Add ginger-garlic paste and fry for a minute.
  3. Add mutton and cook on high heat until it changes color.
  4. Add red chili powder, turmeric, cumin seeds, fennel seeds, black peppercorns, and salt. Mix well.
  5. Add water and let it simmer on low heat for 3-4 hours until the mutton is tender.
  6. Mix wheat flour with some water to make a paste in a small bowl. Slowly add this to the nihari while stirring.
  7. Cook for another 10-15 minutes until the gravy thickens.
  8. Sprinkle garam masala and mix well.
  9. Garnish with fresh coriander and serve hot with naan and lemon wedges.
