Ingredients

  • 1 kg mutton (bone-in)
  • 4 tomatoes (chopped)
  • 1 onion (sliced)
  • 3-4 green chilies (sliced)
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/4 cup yogurt
  • Salt to taste
  • 1/2 cup cooking oil
  • Fresh coriander leaves (chopped, for garnish)

Instructions

  • Heat oil in a wok (karahi) and add cumin seeds. Let them splutter.
  • Add sliced onions and sauté until golden brown.
  • Add ginger-garlic paste and fry for a minute.
  • Add mutton and cook on high heat until it changes color.
  • Add red chili powder, turmeric, coriander powder, and salt. Mix well.
  • Add chopped tomatoes and cook until they soften and blend with the spices.
  • Pour in yogurt and mix well. Cover and cook on low heat for 45-60 minutes until the mutton is tender. Add water if needed.
  • Once the oil separates, add green chilies and garam masala. Cook for another 5 minutes.
  • Garnish with fresh coriander and serve hot with naan or roti.
