Ingredients

  • For the Kebab Mixture:
  • 500g minced beef or lamb (with some fat for juiciness)
  • 1 medium onion, finely chopped
  • 2 tablespoons gram flour (besan), roasted
  • 2-3 green chilies, finely chopped
  • 1 medium tomato, finely chopped
  • 2 tablespoons fresh coriander, chopped
  • 1 tablespoon fresh mint, chopped (optional)
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds, roasted and crushed
  • 1 teaspoon coriander seeds, roasted and crushed
  • ½ teaspoon turmeric powder
  • ½ teaspoon garam masala
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon black pepper
  • 1 teaspoon pomegranate seeds, crushed (optional, for tanginess)
  • 1 egg (for binding)
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons ghee or oil (for frying)

Instructions

Step 1: Prepare the Mixture

  1. In a large bowl, add minced meat.
  2. Add chopped onion, green chilies, tomato, coriander, and mint.
  3. Add the roasted gram flour, ginger-garlic paste, and all the spices (red chili powder, cumin, coriander, turmeric, black pepper, garam masala, and salt).
  4. Lightly crush the pomegranate seeds and add them to the mixture for extra flavor.
  5. Crack an egg into the mixture and mix well until everything is combined.
  6. Cover and let it rest for 30 minutes to allow flavors to develop.

Step 2: Shape the Kebabs

  1. Take a small portion of the mixture and flatten it into a round, thick patty (Chapli Kebabs are slightly larger and thinner than regular kebabs).
  2. Repeat until all the mixture is used.

Step 3: Fry the Kebabs

  1. Heat ghee or oil in a pan over medium heat.
  2. Carefully place the kebabs in the pan and fry for 3-4 minutes on each side until golden brown and crispy.
  3. Remove and place on a paper towel to absorb excess oil.

Step 4: Serve and Enjoy

  1. Serve hot with naan, paratha, or rice.
  2. Pair with raita, mint chutney, or a squeeze of fresh lemon for extra flavor.
